We had one of these beautiful fall days yesterday. Cloudy, the leaves falling, crisp air. I snapped this picture on my way home from the grocery store....a perfect fall day.
On a day like that this is one of our favorite fall meals. It is ridiculously easy to put together and almost impossible to not go back for a second bowl.

The ingredients:
2 cans chicken
2 cans Great Northern beams
2 cans green chilies
1 can chicken broth
1 cup sour cream
1/2 cup whipping cream
1 tsp. oregano
1 tsp. cumin
1/4 tsp. cayenne pepper
1 tsp. salt
1/2 tsp. pepper
Ready for the difficult instructions? Mix all ingredients together except the sour cream and whipping cream into a large pot. Bring to a boil and simmer for 30 minutes. Then add in the sour cream and whipping cream and heat through.
Easy right? And it is so yummy and creamy and just perfect on a cloudy autumn day.

Yum! I love fall days and delicious soup to go with them. I especially love easy recipes that give me more time outdoors and less time by the stove!
