Chicken Salad Recipe

Chicken Salad is one of my favorite sandwich fillings.  The other is Cheese and Pimento and I have a really good recipe for that to share another time.  Chicken Salad makes such a nice, refreshing meal perfect for the hot days of summer, especially when paired with a handful of sweet berries. I think we've made this once a week for the last couple of months because it is so easy, quick, and delicious!  My husband has even been requesting it and he isn't a big sandwich guy unless its full of bacon or meatballs or something like that.  So you know its good!


The ingredients:
- 1 can of chicken or 2 cooked and shredded chicken breasts
- 1/2 cup mayonnaise
- 1 tablespoon honey
- 1/2 cup celery, thinly sliced
- 1/2 an apple, cubed
- 1/2 cup grapes
- 1/3 cup pecans (optional)


The easy how-to:
In a medium bowl mix the mayo and honey together.  Stir in the remaining ingredients, cover and chill for a half hour.  Serve on bread, rolls, or with crackers.  Depending on how much filling you use and the size of your bread this recipe makes about 4-6 sandwiches.  Because of the juices in the grapes and the apples this won't really last for longer than a couple of days, it gets kind of watery.  But no worries, it usually gets gobbled up before that happens!

  3. Looks delicious! I make a similar one, with lemon juice instead of honey for a little tangy-ness. Can't wait to try it!
