Spicy Cheese n' Pimento Sandwiches

Heat wave....ugh.  Heat wave + humidity= double ugh.  I've permanently parked myself in front of our air conditioning! 

Hot summer days like these are the perfect days for sandwiches and salads (like the Chicken Salad I shared a couple of weeks ago).  Add in cereal and smoothies and that is practically my entire menu for the summer.  I know I just don't feel like cooking over a hot stove or even eating a hot meal half the time. One of our sandwich staples is a Spicy Cheese and Pimento Sandwich that is easy to make and delicious to eat.  It has a little kick to it and makes a great sandwich to take on picnics. (Fourth of July picnics anybody?!)


 The ingredients:
- 2 cups grated cheddar cheese
- 1 cup grated pepper jack cheese
- 1/2 cup of mayo
- 3 oz. cream cheese, softened
- 3 tablespoons chopped pimentos
- 1 green onion, chopped
- 1 jalapeno, seeded and chopped
- 1/8 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- salt and pepper to taste

It is as simple as mixing all the ingredients together in a large bowl and then spreading the filling onto slices of bread or onto a roll.  It stores well so you can eat it for lunch for a couple of days if you don't use it all at once.  We actually made this one time and kept it in a cooler and feasted on this as we went on a cross country road trip, Utah to Maryland.  Good memories.  :)

  4. Big family beach trip (at least 10 folks in the same house) coming up soon and this will be perfect to keep in the frig for quick lunches! You are awesome!
